Noodle Son’s Secrets

In the many times I had to cook alone, I have tried countless ways with instant noodles using whatever’s handy in the kitchen. You get to know some favorites but simple ingredients that are good standby for an easy meal.

Heinz Tomato Ketchup, I may never had thought of using it for cooking if I had not discovered my mom using it in my favorite pan-fried pork chop w/tomato & onion dish. The ketchup adds a fruity sweet tart taste to dishes. I use about a tablespoon of it to the noodle soup for a light sweet tangy note.

French’s Classic Yellow Mustard is another favorite! Usually used in combination with ketchup in equal amount, it makes a nice reddish creame color and adds substance to the soup. The sharp mustard really enhances the richness of the flavor and balance out the taste with more depth.

Art of Making IndoMie Mi Goreng

There really is an art to preparing MI Goreng or Indonesian fried noodle, which can makes a big difference in how much you enjoy eating it - as anyone who love it can attest to.

Well prepared it has an almost buttery smooth rich taste without being either dry or watery. Enjoyed while hot, every delicious mouthful is a savory, spicy treat…an experience similar to eating good hot, spicy linguine in a rich buttery olive oil sauce.

Spicy Meat Stew Noodle

Ingredients:

Nong Shim’s firery hot Shin Ramen is just perfect for using larger pieces of cooked meat stock that otherwise would not have much taste on its own.

I used pork chop meat left-over from making a simple lightly seasoned clear broth with squash, chicken stock & meat. The thick slices of boiled meat normally would not have much flavor by itself. Used here, the spicy broth imparted a rich flavor. Adding simple scallion slices enhances the flavor of meaty dish.

Quick Soup Filler

Ingredients:

Hong Kong-style wonton soup noodles are very thin and cook in about 1 1/2 minutes. It makes an excellent soup filler for a quick dish. Soups that work best have a thin broth made with meat, poultry or seafood stock.

Ingredients:

VIFON’s Bun Lau Thai Rice Vermicelli has a sharp spicy & sour taste that makes it suitable for adding any unseasoned cooked vegetables. Frozen sweet pea and corn kernel work well too.

Black Bean Stir Fried Noodle

Ingredients:

Nong Shim Chajang (black bean paste) Noodle is mildly flavored which works well with other left-over dishes that is well-seasoned, making it into a slightly different dish with a thicker sauce.

Low-cost Ramen Pack Cooking

A healthy use of 3 minutes instant ramen pack:

  1. Boil 2 to 3 cups of water in pot.
  2. Fill half of a soup bowl with the boiling water.
  3. Now add the noodles into remaining water and simmer 2 1/2 minutes.
  4. When ready, drain out cooking water over sink and put the noodles into soup bowl (from step 2.)
  5. Add chopped onion or scallion, luncheon meat, egg, etc., a little sesame oil or olive oil, and favorite seasonings to taste.

The reason for draining the noodle separately like pasta is to remove the oil from the fried noodles. Doing your own recipe, you get a nice healthy quick meal.
