Shisen Miso - Soybean Paste Flavor
August 9th, 2005

Shisen is Japanese for Sichuan or Szechwan, a spicy hot western Chinese cuisine, so this entry should be spicy indeed… but, it is unexpectedly mild with little chili in the reputed Tobanjan (spicy miso paste) sauce.
While not really hot or spicy, the thicker peppy reddish broth clings to the twisty noodles for a flavorful mouthful. It was tempting to drink it up like a soup, but I had to remind myself not to as it packed quite a punch in sodium. The miso (cultured soybean paste) and sesame seeds together give a nice nutty accent to a flavorful dashi seafood soup sauce with only a nostalgic hint of Sichuan cuisine.
Both in and out of the package, its premium quality is readily apparent, a very well packaged product. With the favorite noodle texture of Chukazanmai brand, the special deep yellow noodle contains almost no fat despite its generous serving size.
Cooking Directions
- Add noodles to 2 1/2 cups of boiling water and heat 4 minutes, stir occasionally.
- Place contents of soup mix packets in a serving bowl.
- Add cooked noodles with enough hot water to soup mixes and stir well before serving .
